This coffee, named Gesha Clouds, is the creation of Milton Monroy from the renowned San Cayetano farm in the San Juan de la China region. Known for their impeccable farming practices, Milton and his father transitioned from traditional varieties to Gesha, dedicating 25% of their farm to this exceptional coffee. Their expertise extends to consistent recognition in the Cup of Excellence competition in Colombia. Gesha Clouds reflects our collaboration with Milton, resulting in a unique profile that soars to excellence in the world of coffee.

 


PROCESS

 

This micro lot underwent a 84-hour natural anaerobic fermentation in 60 kg tanks, with deliberate agitation every 12 hours for uniformity. After draining for 6 hours, the cherries went through an initial 6 to 8-hour mechanical drying phase to remove moisture and prevent over-fermentation flavors. The coffee then underwent an extended drying period on a raised bed in Milton's marquesina, lasting from 24 to 32 days. Following a 5-day stall in a dark room, it was transferred to a 125 kg specialized silo for meticulous moisture control. The final phase involved a 45-day stabilization in grain pro bags before milling.
